Important note: Due to the material thickness (1-1.5 mm) we recommend to use this pan only on open fire (gas). Hotplates may only be used for max. medium heat are set. The pans warp in too much heat. We assume no warranted service with warped pan.

The "Lyonnaise" is the traditional pan of our grandmothers. The lightweight blue steel is suitable for less intense heat sources. The "Lyonnaise" pan has a high and bulbous curved edge. Thanks to this special shape, the fried food easily slides out of the pan onto a plate or plate. With welded stem.

de Buyer - La Lyonnaise - Iron pans made of blue steel - Strong quality - 1 to 1.5 mm thick and suitable for lower cooking plates - Rapid heating. The continuous, uniform thickness of the steel wall allows ideal heat dissipation. The de Buyer iron pans are ideal for steaks and other grilled meats, omelets, fried potatoes, pancakes .... Not induction-suitable.

For tanning and barbecuing food, the de Buyer iron pan is a must. Once the iron pan reaches temperatures above 140 ° C, it seals the food on the surface as the natural juice of the food caramelizes (the Maillard reaction). The forming crust keeps moisture from evaporating. The food becomes brown and crispy on the surface and remains tender and juicy in the middle. Perfect for frying meat and potatoes and preparing crunchy crêpes and delicious omelets!

Iron and cast iron pans are not suitable for scrambled eggs. Please only prepare setting eggs and omelets in a well-baked pan.

A pan made of sheet steel must be roasted. In the course of use it turns black. The more a pan is needed, the better the cooking process; the blacker she is, the less liable she is. Dishwashers and cleaning products must not be used.
