Lucques olives are particularly fleshy and have a pleasant, fresh aroma.

The anchovies Lucques olives is only available in Languedoc-Roussillon in southern France. They are bigger than the usual in the Mediterranean picholines and are not quite round, but slightly sickle-shaped with a small core. They are manually harvested by the many growers who have joined together in the Cooperative l'Oulibo and there inserted only in water and a little salt. You get so their original character.
